Cherry & Spice Glazed Ham

'Tis the season for a glazed ham! This easy-to-follow recipe for Cherry and Spice Glazed Ham is a yummy twist on a classic that’s sure to impress this festive season!

Ingredients 

Ham on the bone (3.5-4kg) - 1/2
Whole cloves
Cherries, frozen or canned (well drained) - 2 cups
Maple syrup - 1/2 cup
Brown sugar - 1/2 cup
Dijon mustard - 1 Tbsp
Star anise - 3
Ground cloves - 1/2 tsp


Method

  1. Preheat the oven to 170°C (150°C fan-forced). Line a large baking dish with paper.
  2. Using a small knife, loosen then remove the skin from your ham and lie it in the bottom of the dish and place the ham on top. Score the fat every 2cm in a diamond shape. Place a whole clove into the middle of each diamond.
  3. Add 1 cup of water to the pan. Place the ham into the oven for 20 minutes, allowing the fat to warm through.
  4. Into a medium sized pot, place the cherries, maple syrup, brown sugar, star anises and cloves, stirring as it slowly comes to a simmer.
  5. Continue to cook for 15-20 minutes until all the juices are released and the liquid becomes thick and syrupy. Remove from the heat.
  6. Now start brushing or spooning your glaze onto the ham. To begin, add half of the glaze and place the ham back into the oven. Every 20-30 minutes, add more glaze, repeating 2-3 times, and cook until it is golden and sticky.
