Prawn and Shitake Udon Soup

MAKES : 2 SERVES


INGREDIENTS:

  • 500ml dashi broth (available at Japanese grocery stores, usually in powder/granular form)
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • A few drops sesame oil
  • 2x 200g packets ready made udon noodles
  • 2 baby bok choy, split in half
  • 6 shiitake mushrooms
  • 6 peeled and cooked prawns
  • ¼ cup green onions
  • Red shiso leaves

METHOD:

1. Heat the dashi broth in a pot and add the soy sauce, sugar and sesame oil and stir.
2. Add udon noodles – immerse and separate them gently and cook for 2-3 minutes.
3. Using tongs divide the udon among two bowls. Immerse the baby bok choy in the broth for 2 minutes and then place in the bowl along with the prawns and mushrooms. Top with red shiso leaves and green onions.
