Yogurt & Fruit Popsicles with Toasted Coconut

Makes 8

Ingredients

  • 2 cups Greek yogurt
  • ½ cup milk
  • ¼ cup honey (or maple syrup)
  • ¼ cup blueberries
  • ¼ cup raspberries
  • 2 slices kiwifruit
  • ½ large passionfruit
  • ½ cup shredded coconut, toasted and cooled

Recipe

  1. Place the fruit into the base of the popsicle molds.
  2. Stir the yogurt, milk and honey together in a jug and then pour over the fruit.
  3. Top with the toasted coconut.
  4. Freeze for 20 minutes.
  5. Insert popsicle sticks and freeze until hard.
  6. Run a little water over the molds before releasing from mold.
